Note
- For an additional flavour hit and some colour, add 2 cups halved cherry tomatoes.
- How to poach chicken breast: bring water in a saucepan to a simmer, add chicken for 8-10 minutes or until the chicken is just cooked through, shred with a fork.

Step 1
Pesto: Place all pesto ingredients in a blender and process until smooth.
Step 2
Pasta: Cook pasta according to package instructions. Once cooked, drain pasta and return to pan.
Step 3
Stir through prepared chicken, spinach and pesto.
Step 4
Return pan to heat and cook over medium heat for 4-5 minutes or until heated and spinach slightly wilted.
Step 5
Serve with the 2 tbsp grated parmesan and shredded basil.
